Carrot Ginger Salad
Servings:4–5 servings
Recipe:Very exotic tasting, this salad will add an Asian flair to any meal. Rich in heart energy, it is also very healthy for digestion because of the carrots and the ginger.
- 1 lb. carrots, grated
- 3 green onions, thinly sliced
- 3 cloves garlic, diced
- 1–inch piece fresh ginger, grated
- 1 tsp. sesame oil
- 2 tsp. olive oil
- 2 limes, juiced
- Tamari sauce and fresh ground pepper to taste
In a bowl, mix all ingredients. Serve chilled or at room temperature.
