Don’s Special Oatmeal
Servings:2–3 servings
Recipe:My husband developed this recipe a couple of years ago, and since then it has been a staple at our breakfast table.
- ½ c. steel–cut oats
- 2 tbsp. flax seeds
- ½ to ¾ c. rolled oats
- 3 tbsp. olive oil
- Sea salt to taste
Combine steel-cut oats with two cups of boiling water. Reduce heat and simmer for 6 to 10 minutes. Add flax seeds. Simmer for another five minutes. If water is low, add a little more. Add rolled oats. Cover and simmer for 6 to 8 minutes. Remove from stove. Add olive oil and sea salt to taste.
Variation to recipe: Try adding a bit of date sugar and some blueberries instead of oil and salt. Adding different nuts, seeds and/or berries each time creates a different breakfast each morning!
